It turns out the electrical fans relay was actually the issue. The fuses were shot which was causing the fan to switch off intermittently. I'll still switch to the original fan when the parts are eventual in stock and when i have the cash.

:oops: I wish i had read this before I gave the mechanic to go ahead with the electric fan conversion, :oops:
I have not had an overheat problem yet, but the installation did come with some problems. He had installed 2 fans all through a single 30amp fuse, and double negative wired it up through temp sensor. (thats how they do it on VW and Audi)
However an auto electrician sorted it out for me and installed each fan through its own 30A fuse. So all working for now, but I was wondering, what if... I do some 4x4 trails with water crossing, surely this fan setup is not made for submerging!! :shock:
