(Over)Heating Gen3

Over the weekend I got a bit of a scare, as I have only owned my new (to me) Pajero for a few months.

Could someone possibly tell me what could cause this behavior:

Traveling at about 120km/h-130km/h on the highway.
When I stopped I noticed a "hiss" from the radiator cap.
Being in a bit of a hurry I make a mental note to check the water and the cap before I leave back home.

I stop at the first petrol station I can find and top up the water, which was a bit low, and head home.

Temperature gauge normally sits at about 45%
Somewhere nearing the end of the trip I looked down and the gauge is sitting at around 75%;
As I watch it comes down to about 50%.
This happens another 2 or 3 times at seemingly random intervals.
All this while doing 120-130.

Just before I get to the last uphill before home the needle goes up to just under the white line on the gauge ... :shock:
Of course I freak out a bit and pull over.
I check the water again, seems fine.

I start up again and in a few minutes that temperature drops back down to 55%.
I drive up the hill and home.

3 or 4 short trips during the weekend and another today with no repeat of the above behavior.

My personal experience makes me think of a misbehaving thermostat ...

Any advice?

But also consider doing a radiator check and replace cap and thermostat. Not too much money to start off with.

That sounds exactly like what mine is doing.

I'm wondering if it would make sense to mount a secondary temp gauge to verify that the primary is.. iffy first?

If so, where would you place the temperature probe?

Check for airlocks or exhaust gas in the radiator
