Gen 3 GDI 3.5 V6 - Exhaust de-cat

Good day Guys
I have a 2000 model gen 3 GDI 3.5L V6. Petrol
I was wondering if I can do a de-cat on the exhaust. I heard diferent stories but would like to have some feedback from the experts on this forum.
Reason for the de-cat -- Sometimes there is a slight sulfur/rotten eggs smell coming from the exhaust. I have googled this and this ponts to a possibility that the cat convertor/s could be blocked. The engine management light is on as well, but the code indicated that it could be the "temperature sensor" on the single piece of exhaust after the Y-Piece. The exhaust have two "lamda" oxygen sensors - one each on each of the two cats on the y-section.
Any advise will be appreciated.
