Diesel run away

I have heard a few stories of the diesel run away when the engine runs on it's own sump oil.
Among these are a pajero or 2 as well (including my dad's)
I noticed the other day that my intake has a butterfly that closes when I switch the ignition off. This closes the air intake fully just before the intake manifold.
My question........
Why did these engines continue to run after the ignition key has been pulled/switched off - or was the key never pulled?
