Thermostat removed blister 3500 V6

Hi guys
I'm slowly going through my new acquisition and making changes or modifying where necessary.
The first thing my indy did was give all components a thorough service. This included a coolant flush and radiator check. Both he and I noticed that the car runs a little cool and takes long to reach that temp. We also noticed that the heater doesn't work very well. That's when we discovered that the previous owner had removed the thermostat. He did tow heavy caravans and I believe he was under the impression it would prevent overheating.
I'm not happy however and want to refit one. My concern is this; was it possibly done to cover up a much bigger problem? (Like a cracked head). There are no other symptoms of problems.
Or am I wrong and should I just leave the thermostat out? I worry about fuel consumption and premature wear with it removed. Lastly, is it an easy job?
