So at the risk of safety being compromised, I found the plug that makes the car beep if you start it without your seat belt on.
Under the seat looking back towards the rear, there is a small white plug that you just pull out, its the one on the very right while looking back. I just traced the cable from the sensor on the seatbelt plug. Easy peasy, no more beeping.

That is easily the only thing on my Pajero that irritated me. Any idea how that un-plug will affect airbag deployment?

I don't think it is attached as it does not throw a warning light on the dash. Furtermore it is not labeled yellow like all the other airbag related cables.
BUT
I will wait on your comprehensive testing and research before I commit to that statement.

Research in airbag deployment is like being the chicken for a bacon and egg breakfast - and testing is the pig.
I've unplugged mine, bliss reversing in the morning - logically if the car thinks I have my seat belt on then I cant see how it would effect the air bag deployment ?

Maybe the airbag doesn't know you are even in the car and driving
